Food Technologist

At Day 8, we are working on feeding humanity by unlocking the world’s most abundant protein. We upcycle discarded agricultural biomass into sustainable, high-quality Rubisco protein. Our offices are located in Rehovot.

Job Description:

We are looking for a Food Technologist to join our R&D team and play a key role in transitioning our innovative leaf-based protein from development to industrial scale-up. This role involves managing the development lab, functional protein testing, optimizing it for food applications, writing data sheets and specifications to support FDA applications and IP submission  , and working closely with both the internal team and customers.

Responsibilities:

• Work closely with lead scientist and CTO to accelerate product development and industrial scale-up
• Manage and execute the R&D lab schedule and experiments to improve protein quality and stability
• Conduct functional tests to evaluate the protein’s performance in various food applications
• Participate in pilot scale-up and  commercial production
• Write technical specifications and document critical process parameters
• Work closely with customers to support product integration and ensure compatibility with their applications
• Engage with suppliers and external partners to assess raw materials 
• Support the transition from lab-scale to industrial production

Qualifications & Requirements:

• B.Sc or M.Sc. in Food Science, Biotechnology, or a related field
• 2–3 years of experience in the food industry or a food-tech startup
• Ability to thrive in a small, dynamic team with a creative and flexible mindset
• Availability to travel in Israel and abroad
• Hands-on experience in R&D preferred plant-based proteins or other food ingredients
• Experience in protein testing, developing applications, and summarizing findings in technical data sheets
• Experience preparing data for IP and FDA submissions - advantage
• Strong ability to collaborate with customers and understand their technical needs
• Willingness to work hands-on in the lab
• Fluent in English (written and spoken) – mandatory
